Adrian Filiuta is one of only ten Master Sommeliers in Australia, and among just 300 worldwide to hold this rare and prestigious title. With more than two decades in the wine industry, Adrian is recognised for his exceptional palate and uncompromising standards. His career spans over a decade as Group Sommelier for Merivale, where he shaped some of the country’s most respected wine programs at venues including Mr Wong, Totti’s and Fred’s.
Widely regarded as one of Australia’s most sought-after wine curators, Adrian brings depth, precision and restraint to every selection. This philosophy underpins Hunters Hill Wine Room, his carefully considered space dedicated to showcasing wines of integrity, provenance and quiet excellence — from emerging producers to globally acclaimed labels
The Event
Wine Master's table weekend at Wineglass Bay Estate brings together one of Australia’s only ten Master Sommeliers, Adrian Filiuta, founder of Hunters Hill Wine Room and one of just 300 Master Sommeliers worldwide. His mastery of cool-climate wine has made him one of the most sought-after curators in the country.
For this exclusive winter weekend, Adrian presents a personally hand-picked selection of his Tasmanian favourites — from tiny small-patch producers to the state’s most acclaimed labels that now compete on the world stage for cool-climate excellence. His curation highlights why Tasmania is celebrated globally for its purity, structure, and craftsmanship.
Guests are invited to a five-course culinary experience, each dish paired to Adrian’s chosen wines. The weekend also includes three nights’ accommodation, breakfast daily, a welcome gift, and refined off-season touches designed to elevate the winter experience.
